Wedding Cupcake Tier

Ok so it has been awhile once again. My life as a new teacher has kept me busy what can I say. I hope to start baking soon again as I have 2 big cupcake orders this month :) Just easing myself back in.

In the meantime, here is a wedding cake and cupcake tier I made back in September for a friend of mine. I used fresh flowers to garnish each tier of cupcakes. The cake topper is just vanilla cake with a vanilla SMBC that I iced in a rustic way. I was really happy with the way this turned out :)

Ruffled Cake

I know everyone has done this cake by now.... but I think it is so cute and simple, I wanted to try my hand at it too. With the upcoming wedding, I had to test a cake recipe before hand and this was the perfect opportunity to test the recipe and my piping skills. I can't wait to do this cake again sometime :)


I ended up with a vanilla buttermilk cake with peach and black berry swiss meringue buttercream. Very summery! For the peach SMBC, I put a few tablespoons of peach preserves in the food processor before adding it to the frosting to ensure there were no peach chunks to get caught in the tip of the piping bag.

I love the contrast of the blackberry frosting inside the cake too!

Had a little batter left over to make a few cupcakes as well :)

Tonight I will begin preparation for this weekend's wedding! No life this week, but hopefully worth all the hard work in the end ;-)

may = baby showers

I'm just about finished my spring semester and looking forward to blogging once again this summer! I've been able to bake a bit more, a few cupcakes here and there for friends, but I'm itching to make a cake. It's been awhile since I've done one!

In the mean time I have 3 baby showers this month! One was this weekend that I had to miss :( But I sent over some cupcakes of course ;-)

Sunday FUNday

I had a break from cakes/cupcakes this weekend. I did throw together some Chocolate Stout cupcakes for a BBQ though :) As for the rest of the weekend Saturday me and a few friends took a sushi making class at CulinAerie. Pretty informative and I have since perfected my sushi rolling! Sunday my BF and I set out to find new food we have never tried before. We stumbled upon an Ethiopian restaurant and decided to try it out. I've been wanting it for awhile, but I've always been kind of intimidated because I have NO idea what to order. So tonight we just went in and let the waitress tell us what to get :) It was very tasty and a fun experience (you eat with your hands!)
For dessert I was not planning on getting cupcakes, but we were walking around Georgetown and stumbled upon Baked & Wired, which I have been wanting to try for awhile. I figured I didn't know when the next time I would be in G-town anytime soon, so I went ahead and just got some cupcakes (you can never do too much
research right?!). My BF got the German chocolate - he loves coconut and I convinced him to try something different but has coconut too. I picked out the Lemon Blueberry - I felt like something lighter and refreshing :)I have to say... I think I found a new favorite cupcake place! (Sorry Gtown cupcakes!) I love the vibe when you walk in tp B&W and the cupcakes and coffee were delish! I will try their other baked goods next time I'm down there :)

Tutorial: How to make a Phanatic

This is my first tutorial... thought I would make it a fun one :) So here goes! *Warning: Picture heavy post ahead*


The Phanatic is the Philadelphia Phillie's team mascot. Now you can make him in cupcake form!

Materials:
  • Gumpaste/fondant blend in green, red, purple
  • Royal icing in green
  • Your favorite frosting in green and a little big of blue
  • Toothpicks
  • Your favorite flavor cupcakes, cooled and ready to frost
  • Wilton small flower cutter, tips 21 "star" and 233 "Grass tip"
  • Royal icing eyes (I bought these at a cake supply store for .75 cents, but you can always make them yourself)

Fishing Cake

Finally got to present my dad with his retirement cake yesterday. He was so impressed he did not even cut it! It was a fishing scene since he loves to fish (typical retiree eh??) Haha... I also decorated the table with a fishing net, those fishing bob things, and gummi worms (I wanted to get fake fishing worm lures he could use but apparently they contain lead so it's a good thing I read the packaging!)I used my cupcake tower and put the cake on top. The cake was a 6 inch round and a 4 inch round tiered cake. I decided I like working on a smaller scale cakes now. It was so much easier to stack and deal with. I got all the fondant decor finished during the week, covered the cake the night before and then decorated it in the morning. It was the least stressful cake I've done so far :)
Cupcake Flavors:
Strawberry Margarita - strawberry cupcake with hints of lemon and lime zest. Then topped with strawberry cream cheese frosting with hints of tequila, lemon and lime zest.
Key Lime Pie - (one of my dad's fave deserts so I put it in cupcake form) graham cracker cupcale with key lime curd in the middle. Topped with a cream cheese frosting with hints of lime zest. Garnished with a little toasted coconut.
Chocolate Stout - a chocolate stout cupcake made with a home brewed stout. Topped with Bailey's Irish Cream frosting.
I stuck a few homemade toppers I made on some of the cupcakes too - can you guess where he retired from? lol... Well I'm glad everyone enjoyed and I received so many wonderful compliments (when I left only 3 cupcakes were left). It was a definite success!

Ate My Way Through Philly

This has been a crazzzzy week! After the wedding cupcake/cake tower for my friends wedding, it was all about my project for my grad school class. Let's just say I got about an average 4hrs sleep for 3 nights straight! But it's turned in, the class is done...and now I wait for my grade. The boy and I decided to head up to Philadelphia for the night/day so I could relax (which I have not done in quite a few weeks now) and of course EAT :-)

Today's menu: Soft Pretzels for breakfast, cheesesteak taste test for dinner (Pat's vs. Tony Lukes and Pat's won)
Can you get any more Philly than that?! Oh and of course cupcakes! Haha... And since I'm not baking, I'll review instead. I must first state I am in no way a food critic! I just feel like giving my 2 cents in this post today :)

Now on to the good stuff the...the cupcakes!! I tried 2 places today: Philly Cupcake and Grocery Inc. Both were good, but had their flaws and I'm basing my review on only 1 cupcake from each place. First was Philly Cupcake - relatively new, it was soooo cute when you walk in. I'm a sucker for ambiance and decor I will admit it (I wish I got a pic). I love love loved the way they keep the cupcakes on display in this vintage hutch kinda thing. I decided to get the white velvet raspberry cupcake. It was good, with smooth frosting, not too overly sweet. As for the negative things about it, I couldn't really taste the raspberry in the frosting, and the cake was a little grocery storish. Oh and it was $4 cash only :-/ Little steep in my opinion....

Second place was Grocery, around the corner. I had seen them while driving by - I noticed the cute cake plates first, then saw that they had actual real cupcakes on them. I decided on the Lolita - an ancho chili chocolate cake with cream cheese frosting and chili roasted peanuts. Sound's good huh?? As for the positives: cheap! $1.95 for a cupcake and if you get the little cupcake protector (which I have been wanting for awhile now) it's only $5 for the protector and it comes with the cupcake...So for only $1 more, I got a cupcake AND a reusable cupcake protector thingy. Overall tasted good but not great. Negatives: did not taste any ancho chili :( And you could tell it had been sitting out for awhile and what brought me in (seeing them in the window) was also the downfall because it was SO hot that day and the sun was shining in the windows right on them. Of course I did not think of that until after I purchased them, but as my BF says - I have a stomach of steal. I've eatin street food around the world and *knock on wood* have not gotten sick yet ;-)
Though I didn't find THE cupcake place in Philly, I had fun trying them out. Why did I choose such an expensive hobby again?! lol. Lastly, in honor of cupcakes I changed the sheets on the bed before the boy could say anything lol.... and looks like our dog Rocco is enjoying :)

Cupcake Run

Even though I have been slacking lately, I really do enjoy fitness. (You just gotta when you're eating cakes and cupcakes all the time!!) When the weather is nice I try to run a few times a week. I even trained for and completed my first 1/2 Marathon last year! Well I just found out about this Cupcake Run in Frederick this weekend and I'm very interested. The proceeds benefit Cakes for Cause - a wonderful program that provides job training to vulnerable youth in Frederick, MD. I'm going to try my best to TRY to make it to the run, but if you're in the MD area and wanna do something for a great cause - check it out! PS - everyone who enters gets a FREE cupcake :)

Tres Leches Cupcakes


My friend Allie had a BBQ tonight (kind of a kick off the spring/warm weather kinda thing) so I decided to make Tres Leches Cupcakes. I loooove tres leches cake as is, and I've been wanting to put it in a cupcake for awhile now. If you've never had tres leches, it is a sponge cake soaked in three different milks (hence "tres leches") which includes: heavy whipping cream, evaporated milk, and sweetened condensed milk. It's a traditional dessert from Latin America. I topped mine off with a homemade vanilla bean whipped cream. The only thing is that you have to keep them cold and top them with the whip cream when you are about to serve them, but everyone loved them :)

Cupcakes for Haiti


As you all know the earthquake disaster in Haiti has just been unbelievable! It's been hard to hear the news each day. You can't just sit around and do nothing. It defiantly brings to memory the tsunami disaster a few years back - I can remember where I was when I heard about it. Well at work, a co-worker and I were talking about Haiti. She has family there and we wanted to do something to help. We decided to sell cupcakes - all 100% of the proceeds we make are going to relief in Haiti. The restaurant we work at is letting us sell them on the menu, and we sold out last night! Hoping to do the same tonight and all day tomorrow :) We are donating all proceeds to YELE Haiti - it's an organization started by Wyclef Jean in 2005.

I'm featuring flavors all weekend that include: peanut butter cup, chocolate strawberry, toasted coconut, vanilla mango, and chocolate stout! All topped off with a Haitian Flag topper (all hand made by me too lol) I will update this post with pictures of the cupcakes ASAP.

Cupcake cookies

So I decided to change it up a little and make cookies this week. I've always liked those Cookie Bouquet kind of artsy cookies, so I figured I would attempt to make these! I'm too poor right now to afford a baking class so google has been my BEST baking teacher. So keeping with my love of cupcakes, I really wanted to make cupcake shaped cookies - I've seen these before w/ some really cute designs, but I didn't have the cookie cutter shape, and I did not want to wait. I googled around my area for bakery supplies places, but no luck. I thought of Williams and Sonomoa, but they didn't have any.. then I remembered this store Sur La Table had a bunch of random cooking things - I had been in there a few times but never got anything or paid much attention. (It is now my new favorite store by the way!!) I looked it up online and sure enough they had the cupcake shaped cookie cutter I wanted. I called up the closest one and they had it :) Made my day!

So, for the sugar cookie I decided to stick to one of my favorite cookie recipes from Alton Brown. It's perfect for keeping the shape of the cookie cutter you choose. I would recommend adding either vanilla or almond extract (my fave) to the batter.

For icing, I looked up how to make royal icing and how to use it to color in and make designs. I'm not comfortable yet working with eggs and icing and I found an alternative which is to use meringue powder as substitute. It worked great by the way - at least I think it did, I didn't have anything to compare it to since it was my first time. Some tips about the royal icing: I added some almond extract, but I wish I had added some more for flavor. When I was researching stuff about royal icing, I read to keep it covered with a damp paper towel to avoid it hardening so fast - that helped out SO much! I also filled Ziploc baggies with the different colored royal icings - I'm the queen of improvising if I don't have a tool around or an icing bag. All you do is cut the corner a bit, when you are ready for it.
It was a long process - going to get the cookie cutters, making the dough, letting it chill, cutting them out, baking them, letting them cool, making the icing, icing them, decorating them, letting the icing harden, and finally wrapping them up for my friends. But it was worth it! And I learned a lot. The dough can be made ahead of time, the cookies keep for a few days in an air tight container and you can frost them when you are ready. I'm hoping to make some cookie favors my my aunt's engagement party in a few months, so I need the practice.

Rainy Day....


It was a rainy cold day today and I was feeling a little down. I saw this card at Target and it made me happy :) So I bought it for myself. I just thought it was SO cute - the little Asian girl brings out my inner Asian and the fact she's on all those cupcakes, I just had to buy it. Is that weird? Have you ever bought yourself a card?! My little obsession with cupcakes....

Lately I cannot stop thinking about these things! I've always been a dessert person, but there is just something about a cupcake. I'm not quite sure what it is - the childhood memories, the infinite amount of varieties, it's a personal size dessert just for you, and maybe the fact they are just so damn cute! I even bought cupcake earrings the other day. Allie also bought me my first cupcake tower holder! I'm so excited to use it!! And who knows, maybe I'll open my own cupcake place sometime with a little help from my friends ;-)

Over the past few months I've tried four different cupcake bakeries and I want to try even more! Here is a little taste of the cupcakes I have tried so far.

My very first "cupcake experience". Of course I've grown up eating cupcakes my mom would bake from the box or buy some at the grocery store - you know those ones with the super sugary icing you have throw half of it away! Anyways, I kinda heard about this guy Warren Brown on the Food Network. Then I found out he was from the DC area and was opening up his own bakeries with cakes and cupcakes! I just had to try them out. I have since been three times. At first I was impressed - since this was my very first gourmet kind of cupcake. I really enjoyed the strawberry and coffee flavored icings. It light and not too sugary, but after being their 2 more times, I've realized the the icing can be a bit waxy if you don't wait long enough for the icing to come to room temperature. It like you wait in line, you're starving to eat a cupcake, and THEN you have to wait at least 15 or more minutes for it to come to the right temperature. It's like torcher! Also, the past few times I've gone the cake has been quite dry. I have not counted this bakery out just yet as I do want to try some of their actual cakes and pastries. But as for cupcakes, I've found a few other places that I enjoy.

I came across this cupcake joint while exploring around the Reading Terminal Market in downtown Philadelphia. Aaron and I had gone up for the day/night to see a Flyers game and decided to to the "touristy" things in Philly, that we had never done before. Aaron's family is from Philly and we have gone up so many times - yet he had never done all the stuff Philly is known for. So we drove around and visited Love Park, the Rocky statue, China Town, and checked out the Reading Street Terminal (RTS). If you like food (like Aaron and I) the RST is a foodie lovers dream. After we got a quick bite to eat, Aaron had to use the restroom. I wandered around and stumbled upon the Flying Monkey Cupcakes. I was just going to look, but I could not resist and picked out two cupcakes for the way home. I chose Lavender and the signature Flying Monkey Cupcake. I was very impressed! The lavender icing on chocolate cake complemented each other very well, and the little purple sugar crystals on top gave it a tiny sweet crunch. The lavender was very suttle and the icing was not too sweet at all. After I ate it I wish I got a few more. The signature cupcake was a chocolate cake, filled with banana, and topped with chocolate icing. I was impressed as well! I will go back here next time I'm in Philly.

I learned about Georgetown Cupcakes from my friend Ashley. She told me nothing but how wonderful these cupcakes tasted and that we had to go try them together! About a week ago we decided to go for a run in the city not only for cupcakes but to checkout the Cherry Blossoms as well. We parked in Georgetown and ran to the Tidal Basin and back to Georgetown. Whew! It was quite a run, but a beautiful day for Cherry Blossoms and cupcakes! After a quick bite to eat, we headed to Gtown Cupcake and were faced with a line - bout 20 people deep I'd say. This made me even more excited to try them. You know there's good food where the people are! So after about a 15-20 min wait or so, we made it through the line to this cute little cupcake shop. I loved the simplicity and the theme colors (pink and black). While in line Ash and I decided on a half dozen cupcakes - we got two red velvet, two cherry blossom, coconut and lemon berry. They packaged them in a cute pink box with little holes that the cupcakes fit into so they wouldn't swish around, and a simple black and white sticker. There's something about walking around Georgetown with this pink box in your hand - it's like "Ohhhh THEY went to Georgetown Cupcake." When we got back to the car, I could wait no longer to try them! We broke out the cherry blossom first - and WOW! It was amazing!! By far one of the best cupcakes I've had from these kind of places. The cherry blossom was a cherry cake made with real cherries and then topped with a vanilla cream cheese butter cream icing. The flavors went together so well and the cake was so moist and the icing was good enough to eat by itself. I was in cupcake heaven. Thank you Ash!! BTW - The other cupcakes were just as good :)

So today we randomly decided to check out Hello Cupcake. While coming home from my grandparent's house in Ft. Washington, the traffic on 95 was horrendous. Since we were were not pressed for time, but did not want to sit in traffic, we decided to cut through DC. I was also craving a cupcake, and at first wanted to go back to Gtown Cupcake. We were driving through DuPont when I remembered Ash telling me about Hello Cupcake, so I figured it was a great time to try a new place since we were right there. Aaron typed the address into his iPhone (that thing is amazing I will admit) and it pointed us into the right direction. We had no idea what this place looked like and just kept an eye out. Pretty soon I see a brown van with pretty flowers on it and there was Hello Cupcake. I jumped out of the car and Aaron went to find some parking. Hello Cupcake definitely has more room than Gtown cupcake - a bathroom and tables to sit. When it came to ordering there were a lot that were out, but luckily it was just a few more minutes wait for a new batch. I was a bit overwhelmed with some flavors since I wasn't sure what they were and asked the lady to describe like all of them to me, but hey it was my first time - sorry lady. I ended up ordering a half dozen: chai, tiramisu, coconut, vanilla, carrot, and lemon. After I finished paying for my half dozen, the cherry blossoms came out - and of course I had to get that one too, so I can compare it to Gtown. I did notice the box was not as pretty as Gtown cupcak (but as my friends would say, only I would notice something like that!! lol) Then Aaron came in and we split the tiramisu and the cherry blossom right there in the store. They were very good! The tiramisu was a espresso flavored cake with a sort of cream cheese/mascarpone icing topped with a chocolate covered espresso bean. I was a bit let down by the cherry blossom though. It was prepared differently than Gtown's - lemon cake with cherry preserves in the middle and white chocolate icing. It was not bad at all, but I just liked Gtown's version much better. Overall, Hello Cupcake was good and I'd go back if I was in DuPont and in the mood for a cupcake.
